I know this puts many decorators off but I just can't bring myself to work with fondant and I am not alone. I get a lot of work from people who cannot find a decorator in my area who does not work with fondant. Yes, you can do a myriad of things with it but I don't like the texture and I don't like the taste. When I need decorations which would normally use fondant, I use chocolate, white chocolate or tinted white chocolate OR I make molding chocolate. Taste comes first, with my cakes, and THEN presentation. Another peeve ... WHEN did all these cooking shows turn into game shows? I know they're popular but I like a show that teaches; not a show which is based on competition and speed. I live in central upstate New York State and I LOVE all the fresh, organic ingredients to be found here!
